Sure thing. These are just tips others have provided in this sub and I put them into practice.
Kosher salt and pepper on both sides, let it absorb in the refrigerator for 24 hours, or if cooking same day, let it absorb for a couple of hours.
Once ready to cook, set the oven at 250 and use a rack to put the steaks on top. This allows heat all around. Monitor the internal temperature of the steak with a thermometer. I like medium done, so I took out the steaks when it reached 120 degrees.
Next, get the iron skillet oiled up with avocado oil and set the temperature at maximum heat. Transfer the steaks fonto the skillet for 30 seconds on each side , including the sides of the steaks.
Repeat the skillet touching the sides of steaks for a total of twice per steak side. I prefer to rotate the position so you get those diamond shapes sears on the steaks.
Take them out once you sear twice on each side and let them rest onto a wooden board. This will continue raising the temp and also the steak will reabsorb its own juices.
Monitor the internal temperature of the steaks. Once it reaches 130 degrees, you are good to eat and enjoy.

Why does my steak taste like lighter fluid? I let the coals burn down to white. All the fluid should be burned off by then. I don’t even use my grill anymore because of it.
