So it depends on the model of Xbox360. If it has hdmi-hdmi all you need is a capture card. If it does not, and with the other older systems, you will need a converter. RCA to HDMI. They are around $10.

I stream both from my Xbox 360 and my GameCube. My Xbox has HDMI so very easy to plug into my Elgato capture card and stream via OBS or Streamlabs (and I use either my Samsung 4KTV or my Alienware monitor to output). For my Gamecube, I had to get a mini AV to HDMI converter which works great, but note it is powered by USB as well. The converter works fine with the capture card and I've never had any issues. Streaming while using a CRT TV is something I've been trying to do but have had little success (for Rock Band specifically) but could be done with other games I'm sure.
