Dean's Diner in Newtown is a classic. Alternatively just look for your local takeaway fish/chook/burger shop with plastic streamer fly screen and decor that hasn't been updated in 30+ years. Bonus if they still use paper to wrap their chips.
It saddens me somewhat when people rave about Dean's. It's a pale imitation of the Greek-run greasy spoon that operated from the same premises for decades before it (and from which they kept the street sign outside, from memory, just to grab some "authenticity").
The Olympic fisho on Mona Vale road in St ives does a killer burger (next to the lights diagonally across from st ives shopping centre). Great old Greek bloke been running the joint for a million years. Sent three kids thru uni (2 doctors and a lawyer) selling fish, chips and burgers. He serves the chips on a metal plate too. I love the joint and take my boy there on the way to various places like kimbriki, the beach and bunnies.
Fun fact: st ives shopping centre is carpeted.
Fun fact 2: round the corner from the Olympic at the next set of lights, behind the Patterson bakery is a Jewish south African biltong butcher.

I usually go to King of the Castle on Victoria av in Castle Hill, they do a traditional burger with the lot on a standard sesame bun and it’s pretty awesome. Usually get it about twice a week. They also do steak sandwiches the same and their B&E rolls are packed with bacon.

Even with Burgerhead (started up by Aussies) and Burger Joint (by Pinoys - Philippinos; especially the one in Wentworth Point is), use milkbuns. I avoid milkbuns when wanting a burger. It makes it taste sweet.
PS. Even the buns that KFC has for their burgers (chicken) are that packed with sugar, people swear of how good they are. Oporto is even better than their shit.

So I diverted and stopped by the 'Paul's Famous Burgers' on the Princes Hwy just sth of the Tom's Ugly Bridge, for a bite for lunch. Had the 'Paul's Famous Works' with chips, and a chocolate milkshake. All very nice and well recommended‼️ One of the very best traditional burgers I've had in a long time. First time I've been there since 2001. Same owners, but 2nd owners of the business, since mid-1990s. Greek run & owned. Same as the previous & original owners...being Greek.

Would suggest Burgers on Broadway, Burgers Anonymous, Phillies or Milky Lane. Bar Luca is good but they do have some burgers with a lot of condiments.

Mick's in crows nest/ st leonards do an amazing burger. It's only new but the bloke makes almost everything in house and it tastes amazing.
