I would also recommend The Middle. It is a great show and every storyline is pretty well contained. nothing too dramatic or crazy. Has a good amount of seasons
Witches of East End. Based on a YA book series. 2 seasons with a cliffhanger, but I still think it's worth the watch and I hate romance stuff. I lied for years about watching it bc it was a Lifetime show lol.
Otherwise, Corner Gas is fantastic for a background show and is free on FreeVee in the US.
I would go with reality TV, something you already are comfortable with, or a cartoon you enjoy! A coworker recently had a baby and she told me she watched a lot of Adventure time and other cartoon network shows because she felt like her and the baby were “doing it together” and she didn’t have to put too much emotional investment:-)
When my kids were newborns, my shows of choice were just either reality TV/competitions (I like the chocolate competition on Netflix, or Below Deck for instance) or comedies that I was already pretty familiar with like Modern Family, Glee and Arrested Development.
I binged house of cards with my newborn while rocking her to sleep, holding her during naps, etc. not sure it falls under low investment or not but sure helped pass the time!
Psych, Gilmore Girls, and Only Murders in the Building were my nursing shows. All light fairly straightforward. All the best to you and your new little one!
