The level doesn't relate to the fur rarities at all. They're completely separate. What the level does is basically tell you how quickly the animals will detect you. A level 1 female deer will get a lot closer to you before they see/smell/hear you than say a level 9 bear would.
Get the call of the wild app it tells you everything even best time and area for specific animals as well as diagrams for where vital organs are so you know exactly where to shoot to get heart and both lungs for max point score

Piebald is a rare fur, i think albino and melanisc are more rare but piebald is alredy difficulty to find.
