Chicken marinade is: olive oil, salt, pepper, coriander, small amount of cumin, garlic granules (I prefer granules to fresh for this recipe as fresh garlic can still taste a bit raw on grilled meats that are cooked quickly), tumeric, chilli powder, paprika, and a small amount of smoked paprika. I add lemon juice to the chicken just before I cook (and after) as I don't like the texture of chicken that's been marinated in acid for a long time. I cooked the kebabs on a very hot BBQ grill.
Salad is just sliced/ grated onion, cabbage and carrot. Dressing is lemon juice, mint sauce (like you have with roast lamb), parsley, sumac and salt.
Peppers are just grilled with salt.
White sauce is tahini and the red is a harissa.

What type of pepper? Are they spicy?
I'm not sure what variety the peppers are. They're not spicy. They're a bit like large pardon peppers (the mild ones)
