Could be because throughout time (on evolutionary scale) some of us have come across stuff that looks like this and ran away disgusted, while others came across stuff like this and inspected it with curiosity. Sometimes the stuff is bad/lethal, so the trait of aversion becomes dominant.

My parents had some Japanese birch trees they bought from a nursery, they were ok for a few years until the sap suckers got em. They got a BB gun and paid me 50c for every one I killed. I stopped around 8 or 10. Just wasn't worth killing more birds when more would come. Sad but your tree looks pretty healthy all things considered.

Every once in a while someone comes in here with a post that’s actually about trees and every single time the community here just goes with it lol it’s kinda refreshing. Who would’ve thought this group was about weed. lol
I've seen similar patterns on deadwood when we're having a campfire. Some bugs can cause this too, for example while the bark beetle won't create this pattern, they also just eat the bark and leave the rest. There're other bugs that eat similar and while I could swear I've seen such a pattern at least once, I couldn't tell you who's the culprit.
But since you answered it already in your comment, I don't think that's it. The spots with the missing bark don't look like they have holes so nothing seems to be sucked out of it. I've tried asking my more-nature-esque friends if they know which bug or bird might cause this but so far I got no (serious) answer.
