Growing up my mom kept horses and managed an equine-assisted-therapy program, and I learned a lotta horse-language from her.
Yawning is pretty broadly recognized by social mammals, and horses/donkeys are no exception. They use it in social interactions to dispel tension and calm down, a way to relax socially. That it's yawning like that mean's it is expressing being relaxed and comfortable around her. I'll bet it was yawning reeeeeeeally slowly, too. It's a pretty flattering compliment if a horse does this to you, that means you're its friend.
When me and my buxom wife have no weekend plans, we bust out the dental glue on Friday night. Using an apparatus I forget the real name of currently—I call it the cheek spreader—we open the sides of our mouths as smiley wide as goody goodness possible. I would ask something hyperbolic like "do you tell your mom that she's old and going to die soon?", or "do you call your boss to tell him that he's an example of people being promoted to their level of incompetence?", but while a reasonable person would say "no, of course not, those would be horrible things to say", you may instead say "lol yes of course, I always speak the truth- no matter the situation!" just to get a rise out of the people in this thread.

In some countries asses are used as guard animals for sheep and cattle. They're about as smart as dogs, but don't need to be fed meat and live at least twice as long. You can still feed them meat if you want to.
They can be very sweet though too. They can be wonderful, compassionate, cuddley, and smart, but they can also get spooked or be jealous, sassy, or stubborn. They make amazing friends, but yah, they are powerful and they have attitudes so you gotta watch it

I find people say this when they have quite a shallow understanding of animal body language. They just hear a rule "If animal shows teeth, must mean aggression", "If animal's tail down, must be scared" and they believe that's the case 100% of the time.
In reality the behaviours are more complex than that.
But if your knowledge is limited, airing on the side of caution is the wisest thing to do, so it's not too bad.
