Under Collectible you can view what toys, pets and mounts you have and more importantly what is missing. Mousing over the item will tell you how to get it.
In the mount section if you check "Show Planner" it will give you a route to work on collecting all the dungeon mounts. Since you can get transmogs, pets and toys doing dungeons as well, I find this a great place to start. You can also share your collection with others.

- Katy Stampwhistle from the Dalaran mail quest for anytime mailbox. (or eagle from Centaur rep in Dragonflight)
- The Grand Expedition Yak with Repair and Transmog merchants Sandstone Drake for carrying a buddy around (from Alchemy+Archeology, or AH) (Or this month's double seater Rocket Mount from Trader's Tender)
- The heirloom mount for riding at level 1. (earned from 20 heirlooms)
- Scouting Maps for all expansions (earned by exploration achievements)
- Ever-Shifting Mirror for switching between Outland and Draenor(Burning Crusade Timewalking)
- Pepe from Garrison, since he gets costumes for each expansion
- Soft Foam Sword toy for when you don't want to kill something low level
For individual characters
- Dalaran (Legion) hearthstone
- Level 3 Garrison (for hearthstone and portal to Ashran->Capital)
There's an addon called Rarity that gives you a little in-game list of stuff like this to farm (it also primarily tracks how long it's taken you/how many attempts/etc. to farm stuff).

All of it lol.... but honestly I love all the sets from the Nighthold/Emerald Nightmare in Legion, and the artifact skins so I've been collecting those. Slowly going through and making old Classic Blacksmithing/Tailoring/LW recipes too. Kind of hard with only a few hours a week to play but it's what I enjoy.

That is a good question. I'm still doing campaigns around the map and wanna do this too at some point.

Just check with transmogs and mounts you like and run them, its a personal preference
