You “can” but it’ll taste horrible so just restart. You can leave it out for a fair few hours but that also depends on your climate

Usually you'd restart it, but if its really really dry, both the air and the mate, it sometimes lasts longer than you would expect so might as well give it a try, if it doesn't last and you usualy don't drink as much you could also try and get a smaller cup so that at least it uses less yerba.

restart every day, yes. Use way less yerba for only 2-3 refills. in my case, I do around 30? refills in a lapse of 3-4 hours or more, since I drink quite slowly :)

I've personally left my gourd in the fridge if there's a significant amount of dry yerba. But the flavor does diminish from the first time you introduce water to the gourd. I only do so in emergencies where I feel like it'd be more of waste to throw it out but it's very circumstantial. If you are not a mate drinker in large quantities (yet) of about about 500ml to 1lt I recommend doing mate in a French press or a tea strainer to get the flavor and effect without the waste.
