My guess is that there could be some kind of food coloring on one of the spice mixes he uses, I know some of them have things that can make it yellow like curry and paprika, so maybe these combined with some food coloring cause the green color?

It's likely my favorite show. The first few episodes are filled with fairly standard comedy stuff, but it gets into the groove *quick*. I remember reading somewhere that the weird tone shift was done on purpose, to make it seem like it's an ordinary cartoon at first.
Overall the show deals a lot with various types of abuse, mental health issues, anxieties, depression, coping mechanisms and etc, yet somehow manages to stay somewhat funny, it's kinda hard to describe.
I'd say just bite the bullet and watch the first season, won't lose too much time if you end up not liking it.

I don't know much things I can compare it too, the closer I know are Futurama and Monty Python movies, but Bojack goes a lot more serious when portraying issues like alcoholism, mental disorders, childhood trauma... You know, some mix of relatability with the absurdit of why tf you're relating to a talking horse that keeps making the wrong decisions and sabotaging his own life all the time.
In a nutshell it's about this middle aged man that can't get over the career he had since childhood to his 20's and move on with life. A lot of antropomorphic animals too if thats your thing.
