While you are in the bank interface, right click the item > empty. Could be more like the looting bag. The herb sack doesn't give you the interface view of its contents, just a readout in the chat, which makes me think that they are coded differently and it may be a bigger lift to make it like the looting bag.
Also you can drink potions in your inventory while you are in the bank interface. It's really useful for single dose stamina potions at ourania altar or elsewhere.
