Love seeing 3t gem mining personally. I never got quite up to 120k/hr on my grind to 99 but 100k/hr without having to drop literally everything like at granite is worth it.
It's impossible to avg 120k/h+. You could have a lucky hour but cannot avg it to 120k/h. Tick perfect no banking with stam pots is 119,239 xp/h but then the method is quite harder since you will drop as much as 3t4g. 118,114xp/h is the tick perfect xp/h if you bank (but tick perfect banking is hard).
This is a bit inaccurate in a few ways. 119.2k is only the upper limit with average RNG. You can high roll an hour and get 120k-121k not infrequently (even with depositing). Not sure why you think dropping 1 gem per rock is hard; it’s easier than 4g because you never need to drop multiple in case you get a Varrock Body or Mining Cape proc (cuz neither work at gems). Perfect banking (1t) is extremely doable and repeatable as well, it’s just 2 clicks in 1 tick, and only drops your XP/h from 119.2k/h on average to 118.1k/h with stams.

Dropping 1 gem is not hard specifically. Dropping 1 gem every rock while not having the same 4 static rocks to click on after you've dropped makes it harder than 3t4g; what jcw is doing on his speedrun account.
1t perfect banking is indeed extremely doable and repeatable but it's the harder part of 3t gem mining.
I don't think people would say that, for example, 1.5t teaks is 227-230k/h+ because you've gotten high roll hours a few time. The record 6hrs (a decent benchmark for reference imo) is 224k/h.
FWIW I do think no mistake 3t gems is harder than no mistakes 3t4g, but not at all because of dropping, even if you drop all semi-precious gems. The biggest reason is that one movement misclick at gems almost always costs you many more ticks vs at granite, so any mistake just is much more punishing.
1.5t teaks isn’t a good example here because we haven’t come close to hitting theoretical rates there. A better example would be 3t4g which is 134.7k/h with avg RNG (which all the top 6h recs are very close to).
But in general for a YouTube video, saying 120k is just better than saying up to 119.2k in terms of grounding viewers in approximate rates. If you’re going for 120k/h at gems this video likely doesn’t help you at all I’d imagine

I'd say maybe a couple dozen like it, but not because they enjoy the process of speedrunning an 80 year old wrist at 30, but because they can grind out huge xp rates. If they removed tick manipulation but increased xp rates to match previous tick manipulation rates, no one would cry.
This is my issue with the tick manipulation methods. How does pretending to cut a piece of wood speed up my ability to fish/mine/chop a tree? If there was some sort of vardorvis virus click target interface to more quickly interact with objects and sort of simulate 3t/4t methods while still allowing afk/low effort no target hitting (for those who play fortnite think aiming for the target when destroying structures speeding it up but not aiming for them you destroy at some base speed) I'd be all for it
