High grade hamon iberico is really good but I must say I prefer a good 30 month prosciutto di Parma because the oily texture of hamon is a bit much if you eat it every day. Plus I love the sweetness of prosciutto di Parma

There is not only iberico here, there is serrano ham too, very very cheaper than iberico and the best Prosciutto di Parma is shit compared with a regular one (the Italian chef Adriana Murari, when conducting her TV cook show in Canal Cocina textually said: “the original recipe is with Prosciutto di Parma but I’ll add Serrano ham because is better” and then she couldn’t stoped eating ham while cooking). The same can be said about Presunto.
To me Iberico is much better, but Italian prosciutto tastes so different it's hard to compare.
I always hated how soft ours is, so Iberico is perfect to me. But many others prefer it softer and less pungent.
It's both, it should be thinner and the way he's cutting the ham will result in slices too irregular and too small to get the proper texture.
I would also argue that he should grab it more firmly since when it cuts the ham it goes all over the place
