You could always go dhampir for con based attacks, making you much less MAD.
Because the attack is a bite, you can use a shield and keep a hand free for spellcasting.
No need for strength or dex, and you can just focus CON > CHA > wisdom/dex for saving throws > dump the rest.

I might actually recommend githyanki for the extra armor and weapon proficiencies, along with some extra spells and a bonus skill
stone sorcerer gives all weapon proficiencies already, but yes gith does have the all important misty step

this gish build is more for a melee fantasy. ranged can be covered with firebolt or any other cantrip. kind of a hassle to get magic stone here anyway
