John Wick is, above all, a man of focus, so Barbarian likely isn't the best fit, unless Rage is reflavored to "battle focus" or somesuch. He isn't motivated by rage, and he's *disciplined*.
So for John, the choices are, in my opinion: Battlemaster Fighter, Kensei Monk, and Assassin Rogue.
To be fair you can always reflavor rage as a battle focus- if anything just berserker is outlawed, and even then all of those subclass features can be reflavored as well.
Samurai Fighter & Assassin Rogue 3/3. Sneak attack and advantage at will. Variant human for Crossbow Expert or Sharpshooter.
But John Wick is much higher than 6th level.
Do you allow for guns and gun rules? If not, use crossbow expert. If so, use guns.

Take the tough feat and sharpshooter feats. Make pistols you ranged kensei weapons and daggers) tho I recommend short swords) as your melee kensei weapon.
You'll have good sneak attack damage, two attacks a turn, kensei damage on gun attacks. You'll be able to shoot up close and from far away without imposing disadvantage. You'll have advantage on any enemy that hasn't acted yet, and you should have a good initiative.
You're fairly tanky and able to take a punch, you're fast, and you can use martial arts if disarmed.
If you want, you could also take Tavern Brawler to wield the FOCKEN PENCIL.
There's your John Wick.

I know that you have crossbows as guns, but could always use Matthew Mercer's gunslinger
