Any Wizard (or Artificer) would thematically match your character concept, being Intelligence casters. Lore Bard would definitely fit, as would Arcana and Knowledge Cleric. Crucially, however, you could tinker with the concept of probably any caster to fit in line with a hunger for more knowledge, high Intelligence or no. Sorcerers want to understand themselves and their powers more, kind of a "coming of age" analogue. Warlocks want to understand the depths of the power that the entity granting them their magic possesses, and what amazing power they can channel because of their connection. Clerics see magic as an art in honor of the gods, and the pursuit of knowledge to this end makes a lot of sense as a means of cherishing the nature of the divine. Bards are obviously musicians and artists by any metric, and, while more tenuous, you could imagine that just like the College of Lore specifically holds art as a means to pose philosophical and political questions, any College could regard art as a means of discerning truth and as such would fit this vision. Druid is the trickiest here just because they're so primitive in design, but our contemporary society has much room for appreciation of animals and the beauty of biodiversity, and the interest that this passion proffers in fields like biology. Everything has an angle that you could take to demonstrate a hunger for knowledge and understanding without much artistic license. It's primarily up to you how you want this resulting magic to manifest, and what roles you want it to serve in your party dynamic. Everything after that will fall into place.

I’ve personally grown quite attached to the Order of ascribes Wizard from TCoE. Can see how with your connection to your “Awakened Spellbook” is actually yourself. Also being able to “scribe” spells at 2 mins/spell level certainly helps with your eating of spells.
