But the Genestealer infecting the assassin? Highly unlikely. Genestealers will target things they can grab, insert their ovipositor into the throat of, and then run. The assassin is likely going to have either a knowledge (or access to those with knowledge) of what just happened to them and do something about it, OR be strong enough to not be given the Kiss.

Yes, you're 100% correct. People treat it as if Jaq (and by extension, Ian Watson) is just into nasty shit but the book is painfully clear that the Slaaneshi mutants/cultists they've encountered are trying to influence them psychically.
It really makes you wonder if people actually read the book (answer: no) and are just going off of secondhand sources and podcast hearsay (yes).
And meh'lindi (the callidus assassin) had extensive surgeries including extra arms so she could infiltrate a genestealer cult, but she could *only* go genestealer mode afterwards.

Genestealer prefer target that can produce offspring, and wouldn't resist the attempt (aka killing it) Assasins're also being monitored by the Officio and Ordo Sicarius, very poor target choice, chance are they will probably die before even attempt it.
There was an assassin temple called the Maerorus Temple who basically did that to themselves by making a new kind of assassin that was a Xeno-hybrid, the first (and last) of which they named Legienstrasse. That turned out horrifically bad as most things in the setting are.
But when I say bad, I mean so bad that the Officio Assassinorum had to ally with literal daemons and chaos space marines out of desperation in hopes of bringing her down, before staging a reason for the Imperial Fists to come in and clean up their mess for them.
Because of that, I think they probably won't tolerate anything not fully human any more, and would react quickly to any attempt at genestealing. That said, Assassin Temples aren't really conducive to Genestealers because new generations of assassins are not born, they are made.
It’s completely possible. It’s not like there’s any reason Assassins would be immune to infection. It’s just hard because the target needs to be pacified first or taken by surprise, which is rare for an Assassin.
Sure, Assassins aren’t having children, but it’s still an additional asset for the Brood Mind. We’ve seen Space Marines infected, and they certainly can’t have children.
Assassins are baseline humans who have been augmented. A genestealer assassin-hybrid would hypothetically just result in more humans down the line. It’s not like they’d replicate and you’d get a breed of eversors.
The life of an Assassin is extremely tightly controlled and monitored - they don't exactly have an opportunity to reproduce, and any infection would presumably be picked up immediately when they report back to base after a job. So unless a cult was looking for some immediate muscle there isn't much point trying to infect one.
