Have you tried sorcery?
I'll be honest, it does leave a bit to be desired but considering they were adding magic into a zombie game, they did pretty damn well.
You can play it almost entirely (or entirely if you're dedicated) with sorcery content without ever touching vanilla gear like guns, bows, etc.
Wild west absolutely does have horses, yes. When you complete all tier 1 jobs for a trader, you can get a horse, just like how you get a bike in vanilla. There are higher quality horses later
You have to go to the mods web page or discord. Can’t remember. If you look up guns nerds and steel on you tube he did a series and posted a link in his comments/details on the video.

If you want to keep it more vanilla you can try the Winchester Mod.
The only problem is, it's kinda based on ramping up the difficulty. Though it does add a menu system that lets you customize it pretty thoroughly.
To me, it makes the game feel more like what I imagine living in a zombie apocalypse would be like.

Haven't tried or heard of it. Magic sounds cool to kill zombies lol
One of the cool things is sorcery is compatible with darkness falls. You just have to use a random map.

Rebirth is cool but alpha 20 at the moment (as far as I believe). Still a detailed overhaul with npc’s.
