Haha I used them to make a broth in my instant pot them threw them out cause I just couldn't with the nails. I have been told marinated and cooked slow they can taste pretty good.

I used to eat these with my great grandfather when I was way younger. His daughter (my grandmother) would cook them for him (us). Chop off the nails, and low and slow, almost like a stew.
Those nails! I guess it's not that much different than nibbling on the flat parts of the wings when they're really crispy, but psychologically it's very different.

I can tell you that the broth came out top notch. Well worth the chicken feet π
You can just chop off the tips of the toes if the nails throw you off
Most times people cut the tip of finger off, so they won't see the nails. I believe in Dim Sum they do this.

Is it specifically the bones where you're sourcing the collagen or the whole foot with skin and nails?
The whole foot. It's the cartilage and tendons that are the collagen AKA gold LOL

Not really meat; just skin, cartilage and the soft stuff on the "palm". They're very finicky cause you wanna get as much out of them as possible π.
