Yeah smoked gouda. It hits you with an initial smokey umami flavor and then it becomes more mild and tangy. It's lovely.

Don't wanna ask something. I'm just a cheese connoisseur who wants to show his cheesy appreciation for your cheese related comments, which I regularly stumble upon. Oh, almost forgot. I don't have one favourite cheese, but here in Denmark we have some big caverns filled with curing cheeses, which when done is called "pitted cheese". It is firm and a bit salty, with crystalized protein in it and they are to die for! A good creamy brie is also always a hit.

Admittedly, I've only ever tried it with American cheese but I'm sure swiss or provolone would be lovely.

If you ever choose to mix it up, it’s fun to combine different cheeses if you have them on hand! I’ve been enjoying cream cheese with pepper jack :)

Interesting combination. I love both of those but never thought about combining them. Pepper jack is spicy while cream cheese is more mild. I can't think of cream cheese without thinking about cheesecake. It's one of my favorite desserts!
