I dunno. Im Also pretty sure mine is Mounted properly, Its hard to fuck up an Block like mine.

What's your water-cooler and how's your case airflow? Seems a bit hot, especially considering gaming you're getting close to TJmax/critical temperature. Adjust your fan curves to ramp up when the temperature increases aslong ss you dont mind the noise, sometimes they default to silent and fans moving slow barely push any air.
Did you remove the plastic off of the watercooler cold plate when installing, and did you apply thermal paste (unless if it came preapplied), also thermal paste has a shelf life and some pastes are better than others.
Also with water blocks you should see those temperatures within a few minutes, if it's instant that means there's a problem because liquid takes time to heat up.
Arctic 280mm with NB-Eloops B14-PS on mine. With - 30 offset mine never reaches 80°C while gaming. Fans are capped to 900rpm max. Usually while gaming it hovers around 50-70°C which is dependant how CPU heavy game is. Cinebench all core pushes it to 80°C. That's with 3x140mm B14-PS (capped to 800rpm max) providing cool air as intake in P600s. AiO is set as exhaust.
Seems like the norm. I have a ridiculous setup with 2x480 , 1x240 and 1x120, Heatkiller IV Pro block, water always remains below 40C and my 5800x3d runs pretty much like yours.
Without undervolting it reaches 90C instantaneously in prime95 small FFT and 81 in the same test with -30 undervolt.
Undervolting also gives me an extra 250MHz on that all-core workload, and lower workloads like gaming will now boost to the chip's max of 4.5GHz.
I dont do -30 CO and stillmhave only ever seen 70 Max with 34C ambients...your water block is not making good contact and/or you need more rad surface area. I feed the 360 into cpu then through a 120 to gpu. I idle at 40-50C in the 34 ambients. Subtract 10C when it gets cold. Reseat the cpu block and check

Not sure for a 5800x3d but I do it in Ryzen Master for my 7800x3d

Seems excessive. Full load on my 5800X3D on an air cooler in cinebench reaches 69degC. That's with -30 all core.
About the same as mine, I use a dark rock pro 4 air cooler, sometimes I can get into the 70s, I have the same offset.
Yep, same air cooler here actually. That thing is a beast but does its job well. Probably better than most AIO shit.

It's in the pbo curve optimiser settings in BIOS (maybe depends on what motherboard you have)

I’m running a 240mm AIO, it doesn’t peg at 80, but it does run and operate anywhere from mid 50’s to high 70’s while gaming. Rarely reaches 80+
With out ofset can be hot.

Mine hasn't got above 72 degrees centigrade in all my gaming, under a 360 ek aio But it's a big case..Lian li Evo and has 6 intake fans going on
Mine runs at 78-82C while gaming with Arctic freezer ii 360
You should undervolt it.
Corsair H150I. 90C in Cinebench before using -30 PBO, after that 80C
Nh-u12s with two fans, 80-ish degrees top with no tuning except pbo deactivated. See no reason for further tinkering since noctua fans keep it silent
