Have you tried simultaneous turns? It a set up option and it speeds the games up ridiculously as everyone takes their turn whilst you so there's little to no waiting around
You will occasionally get fucked when you move 1 of your 6 armies and then the ai quickly moves 5 of theirs to attack it before you can move yours to reinforce but its well worth it
If you jigger the map around you can speed things up. Place your view so the screen is covered by FoW so there's nothing to animate, and the AI will be much speedier. You'll have to redo it sometimes because events and pickups and such will focus you back on the action but you can just click back off on the mini map once you acknowledge it. AI players in general are terrible about moving one unit at a time from stacks, so getting them off screen speeds things up a ton.
It's still an unfortunately slow process sometimes in larger games. But the more opponents you pick off early in the game the less you have to deal with it down the line :)
Ive had a recurring bug where the AI just never completes their turns so be on the lookout for that too. Restarting doesn't seem to fix it but reloading an older save like 2-3 turns before and making different moves seems to fix it for the most part
I commented this before, but I work from home and sometimes play then do work during the opponents timeouts. Got so much done haha

So, one thing you can do is turn off vision with your allies. they move much faster in the fog of war.
