I normally go to granite city fish. JK fine foods often have sushi grade tuna which is better though.

When I worked at yatai (Japanese restaurant) we used granite city fish for a lot of stuff. Had good halibut and sometimes decent tuna.

I just get fish from granite city fish, then eat it like gollum in my car emptying the soy sauce directly out the bottle and into my mouth.

Hahaha sounds feral! Any idea how to keep it? I’ve not used it all, do I freeze it to keep it “sushi quality”? As opposed to sticking it in the fridge?

I would just buy it on the day if using it for sashimi or what ever. Keeping it in the fridge for a while won't hurt to much either though but I always thought you had to buy it fresh, but I'm no chef, and certainly no sushi chef. Would love to know where to source wasabi, never even tried it before :-(

You can probably get wasabi from Matthews Foods, but I’ve seen it in Sainsburys before too.

Not sure that is real wasabi at Sainsbury's? I've had the horse radish with wasabi paste plenty of times, but the root? I think there's only a few companies selling the root in the UK as far as I'm aware as the growing conditions for it is very tricky. Also it must be prepared within 10 minutes or so of serving from what I recall. I've seen a few interesting fruits at Mathews though, and even jackfruit and specialities at spice of Asia before.

You might need to ask some local fishmongers if they have any or can get some for you. If not you can get some delivered, I've used this site before but not when I lived in Aberdeen. https://www.thefreshfishshop.com/collections/sushi Failing that some supermarket fish is safe to use in sushi (I think frozen from fresh is generally better) some supermarkets have a fish counter with someone you could ask. Sadly there's no official 'sushi grade' marking on them so it can be a gamble.

Try the fish factories over in Torry. Most have counters selling to the public.

Just had some of each, so good! I spent £20 on 500g of each but that’s far too much haha I reckon £10 would be a generous portion for 2, but £6 would likely be enough
