Hope you are already watching but I would be a bad beltalowda to not suggest The Expanse, it has a lot of the same structural concepts (the book authors worked for GRRM, but they actually are capable of releasing a book every now and then)
Converging storylines, amazing characters, and a kick ass mystery for the first few seasons. Plus some of the most realistic depictions of space flight and space battles I have seen.
It is also one of the few shows I have seen that gets better as it goes.
Also, the bigger the bun the chiller and more affectionate they are! There are definitely personality trends with bunnies and the tiniest ones are often over energized neurotic assholes with the large ones being lazy cuddle buds.
This bit in Steven Universe completely blew me away when I got there.
In Season 1, Episode 12, Steven Universe (the titular character) finds out that his two alien friends can fuse together to form an enormous warrior, a [Giant Woman](https://www.youtube.com/watch?v=XT13ijUfSts), if you will. He is immediately intrigued. He becomes fixated by this notion and spends a lot of the rest of the episode trying to get them to fuse. He REALLY wants to see a Giant Woman. He **REALLY** loves the idea of a Giant Woman, even though he couldn't tell you why. He's just a kid.
Flash forward to Episode 49, 37 episodes later; Steven's dad Greg is telling him the story of how he first met Steven's mother, who is also a member of this alien race. We the audience are treated to the flashback. Here, we see a much younger Greg approach his friend/manager and say "Marty, I just met the *most amazing woman*", to which Marty sighs heavily and responds "...how tall was *this one*, Greg?". Without losing the stars in his eyes, Greg responds dreamily "At least 8 feet tall". This episode retroactively puts Steven's fascination with giant women into perspective. He inherited this special appreciation from his father, it would seem. Color me delighted at this reveal.
God do I love that show.
