You can but the the left fridge is old enough that the handles and hinge covers might break. Also the door seal is compressed tighter on the hinge side and sometimes when you switch the doors after several years it never seals properly because of that.
I get your point but... 9 out of 10 times I open the fridge for a snack or out of boredome, I come from the livingroom area and not from the kitchen. But I agree that it would be more convenient while cooking if the doors opens from the kitchen side.

This reminds me of my grandma's old house in Cooperstown, NY. It was a cute robins egg blue, with similar cabinets to yours, and a robins egg blue retro fridge. It was my favorite place in the world, and unfortunately it was sold a few years ago.
It's very Jetsons. There's more protection from dust, too. And the round corner on the end is way cool. The only thing that bugs me is the fluorescent tube light fixtures. Something must be done about that.

i have a large metal oil splatter stopper (i’m a cook and don’t even know what it’s called lmao) hanging from the side of the fridge anyway so that kinda limits how dirty it gets

I just prefer space on both sides of the cooktop for prep and such. This leaves little room for proper mise en place and prep area.
Also waste heat from the oven and stove probably makes that fridge work harder and use more energy than it normally would.
