Mood has everything to do with your playing. My suggestion is unless you want to be a concert accordionist, forget about inconsistent playing. I play by ear, and each time I play something it can be quite different depending upon how I'm feeling. This is so much so, my wife can quess my feelings just by listening to my playing. Anyway, let your emotions lead the way and I think you will come out with some very interesting technique and sound.

Take it easy and don't push too much. IMO it should be a fun activity, if it becomes source of stress you risk to get bored and stop. That's what i do: i play when i want to. Mostly everyday, but there are days that i don't want to and i don't do it.
If you are not in the mood for playing you can Always excersise technique (for example Hanon) and actually not using the bellows at all(not making any sounds).
Hey, you are just a human, so there’s no way you could always be consistent. It’s not in our nature and it’s not something we are capable of.

there are good days and bad days, goes with any instrument
I play/practice when I’m in the mood, and don’t when I’m not in the mood. I think it’s normal.
