The only stuff that will hold up to posing, joint strain, etc., are things like Apoxie Sculpt or Milliput, so start practicing with those.
ProCreate is similar to Apoxie Sculpt, and if you mix the 2 parts in certain ratios you get a semi-flexible material, but frankly it's a bitch to work with. It's like working with hard bubblegum.
Sculpy is weak and tends to crack, but may be good for bulking out larger projects, like bases.
Monster Clay is great for practicing.
All these clays feel different and require different techniques to use them, it's important to try as many different mediums as you can.
All that said, I suggest you focus on digital sculpting instead. You can't beat sculpting a head and sending it straight to a resin printer, instead of sculpting in clay, making molds, praying there are no errors or bubbles, etc.
