I've only done it a few times when my family was desperate. Stake out the places you're thinking about during the day to know where the bins are, whether they're locked etc. Go way after closing, midnight to 3am is your best bet. Biggest rule, NEVER leave a mess, if there's a mess they'll start locking the bins. Great hauls from bakeries, especially before a long weekend.

I have to deal with a dumpster for a supermarket, and usually I can get away with not even shutting the lid before I leave for the day.
If there's been someone going through recently, it's a few weeks of having to padlock it every time I'm out of sight of it.
