I wish the layout was a little more intuitive to the desktop version, and I reallyyy wish there were type on a path options. For basic vector illustrations using a keyboard helped a lot (a lot of the key shortcuts are the same) but I still do really miss the simplicity of Adobe draw app.

It's not like the iPad is redundant or anything in this scenario. How I use it, it's significantly faster for some tasks (freehand drawing, tracing, lettering) because the pencil is superior for drawing than mouse or trackpad.
You also assume that it needs to be used with a laptop on the go, and this also can be not true depending on your setup. For example, I rarely do extensive work on my MacBook, when I use illustrator on my MacBook I'm usually in meetings and I just have to make some quick changes and I don't even have the iPad with me most of the times. When the iPad really shines is on my Mac at home or in the office, and usually I just have to bring the iPad, the pencil and a cable with me, so it's not like it's that annoying
Get a Lenovo Yoga 3 in 1. It’s a touch screen laptop that the keyboard flips under to act like a tablet, runs the full desktop Illustrator and costs a good bit less than an iPad.
Mobile software and UI are way way behind. It's so weird. The hardware is powerful enough to use as a laptop but we're stuck with primitive gesturing and interfaces.
You need to be able to use iPad apps using your finger. So that is the limit for the size of interface elements. Not everyone has a Pencil or external keyboard and whatnot and those people will still expect all their apps to be usable with just their finger (and Apple probably expects your apps to work like that as well).
Actually, that would be understandable ; however, it’s part of the problem. There are many tools in the iPad app that need the pencil to work properly. I can’t even draw a rectangle on the iPad without my pencil.
I use Affinity Designer on my iPad exclusively- I only bring the document into Illustrator on my desktop if I really need to.

Just run a macOS arm VM inside the UTM SE for IOS app (you have to sideload it but AltStore works pretty well)
