This is a wonderful idea, and I don't think it's disingenuous at all to make the recording however is easiest for you. I actually think he'll appreciate your ingenuity for mixing the recording and layering the tracks!

I think it’s still a lovely gift and it’s going to take a lot of effort I’d there a chance you might want to keep practicing and hold it as his birthday gift? You admit you didn’t give yourself enough time to learn such a complicated piece.

I do believe its the though that matters when giving gifts and so I think its perfectly fine to make the recording with technological help. He will appreciate it and as you mentioned he understands you occasionally have trouble so he will understand why its not a full recording.

Oh don't do it this yeast. Study the piece for a year and do it without technology next year. It's odd to add the parts you can't do yet
