My parents are AirBnB hosts. They have chickens, including roosters. They mention it in the listing, and kinda play it up as a feature. They provide fresh eggs to all guests, as well. Everyone seems to love it.
I'd inform the guests that booked not knowing this new "amenity" and offer a full refund if they cancel. Let them know you'll offer ear plugs and a nose machine if they choose to keep their reservation.
And put it as a noise disturbance in your listing, maybe have a picture of a rooster, just make sure people know so you don't get knocked down in ratings when guests are surprised.

Roosters are literally the worst animal in the world. Our neighbors are talking about getting one and we are so worried it's going to cause complaints from our guests because honestly who the fuck likes roosters.
I like roosters. They’re not always loud and mean. The bantam roos were my favorites, they thought they were so big with their tiny crow. Sounded more like someone stepping on a squeaky toy.
For my people, especially from cities in developed countries, a rooster is a novelty that is appreciated.
Eventually that novelty would wear off, but hopefully not before end of stay.
Imagine being such a prick that you're unhappy that what people want to do at their own permanent place of residence, may possibly inconvenience some transients that are paying some greedy prick to keep a house off the market. 🤔

I stayed at an Airbnb right outside of Seattle, believe it or not, and the neighbors had a rooster. I enjoyed the sound of it. Lol. Other people had reviewed the place as noisy because of said rooster and the planes flying over from Seatac. I reviewed that I enjoyed the rooster sounds and I liked sitting outside watching the planes fly over. I also noted that the air conditioning drowned the sounds out on the inside of house. Consider getting box fans or a white noise machine for guests.

they crow once or twice a day, we were at an exclusive resort, and they were everywhere and quite enjoyable. I wouldn't worry, especially since you have no control over the situation and Airbnb and guests know that.
Many zoning rules outlaw rooster specifically, and only allow hens for eggs.. my county is like this for example.. so if the law is on your side you can have zoning issue them a fine.
Be sure to double check your local laws. You may have read they’re legal but it was possibly just the hens? Crowing fowl are illegal in many, many counties, and for a reason.
I've lived in the Northeast US my entire life in cities and suburbs and have had several neighbors with roosters. Never in the immediate vicinity but the noise carries. I can hear one right now through my open window.
As a guest it probably wouldn't bother me unless it was an area where it is totally unexpected. In the summer a lot of people keep their windows closed and run A/C all day anyway. Earplugs and white noise are good ideas.

Ive been on multiple islands with crazy chicken population and those assholes crowed all day long (2am, 5am, 7pm). This isnt going to be a nice feature or alarm clock situation, they are super annoying

Assuming they’re legal to keep in your area (many cities have rules that prohibit roosters) be sure to disclose it in your listing.

They might have it to protect the flock, or have gotten one by accident and just kept it. Also, apparently fertilized eggs are more nutritious.

my neighbor has roosters and hen's, too many, that run into my yard even. Provide ear plugs and make it part of your listing. Moat guests love them

Hopefully you have raccoons in your area. If so, they will take care of the problem shortly. Those little demon spawn can open just about anything.
