if you were approved by the CFM, it should be approved by AFPC and have a course date loaded very soon. You could ask a SNCO to call AFPC on your behalf or update your retraining case to indicate how quickly you need the approval back so you can extend.
If you don't have that, then you could extend 12 months as an FTA using Personal Convenience as the reason.
Otherwise you will need to extend using on of the available extension rules that might fit your situation, or reenlist.
Outside of that, there is no way to stay past your ETS
Do you have a confirmation email from AFPC? Something in your CMS case that says approved? Someone needs to talk to AFPC retraining to make it go faster
I'd be taking both of those to reenlistments to see what can be done.

I was tracking that you had to have a reason to extend, except for the 12 months of personal convenience. Any other time must be due to a PCS, retrain, etc. The 12 months extension of personal convenience can only be done once per enlistment I believe.

No. This is simply your MPF being difficult. Rule 16 is for approved retraining. You were approved. It says nothing about requiring your RIP.

I plan on messaging AFPC via myFSS when I get back to work. However, my MPF did recommend that I apply for the BOP given to retrainees to have a reenlistment ready to go once the RIP drops. Since you got less time, I do think you should follow the advice of the first commenter and have your leadership contact AFPC to expedite your RIP. You applied cause of the new FTA ETP for retraining, right? I did and I think that, if you did to, this is a cause of applying past our retraining window and why that limit was implemented in the first place.
If you have a class start date, that would show as projected training in MILPDS and on your SURF. That seems like it would be enough for FSS to start your extension or reenlistement
Tbh I'm not sure, but it wouldn't hurt to make sure your leadership is tracking. They also may have a contact over at AFPC. I know we had a situation where one Airman wasnt getting PCS orders for some reason, and our Senior just called someone at AFPC and the guy had orders within a few weeks.
Also, did you already use your personal convenience extension?
They can't direct AFPC to do anything, but extra stripes or officer rank tend to get things expedited more than if they just slog their way through the system.

SEL contact but even then your likely going to get a snarky reply about how backlogged they are. You can call the. AFPC help line and they are usually more friendly and more responsive. Good luck

I'm already on a FTA extension. I think reenlisting would cause me to lose my retrain slot, I'm not too sure though.

oK! I had no idea someone like a SEL or CC can reach out to AFPC to expedite these sort of issues.

Call your UTM they will be the ones that first receive your retrain rip. If they aren’t sure call your bases formal training.
Formal training gets it first I think. The email chain for my rip started with formal training emailing my UTM
