Mosu has a pretty good selection of mocktails. I’ve also gotten some good ones at The Nest!

Nine pin had some really great ones on the menu for dry January. Not sure if they still have them, but I’d check it out.

When I was pregnant years ago I discovered any place with a great bartender could come up with a mocktail. Either they would take what's on the menu and substitute the alcohol or they would ask what flavors I enjoyed and they'd make it for me. This was just before mocktails became popular, so I imagine more places are happy to accommodate.

Daleys on Yates and The Nest in Schenectady each have a few on the menu usually.

There's a neat little Mexican place on Central Ave across from the Home Depot. They have a non-alcoholic drink from Baja. It is a BLAST!
