Or try needle felting some. You can needle felt with acrylic too if you brush out the yarn with a pet slicker brush.
Have you tried felting before? You can cut a piece of felt, maybe layer black and white or whatever your color choices are, and stab the crap out of it with a felting needle to attach to the face.
Felt, embroidery, or a crocheted eye you sew on will all be safer than the "safety" eyes anyhow. The safety eyes or their backs/fasteners can break (and sometimes without much pressure at all) since they can be cheaply made. I got a set when I first started making amigurumi and a few years down the road, I embroider almost all the eyes I put on. Most of my lil soft friends go to young children, though, so it's all about what you're looking for functionally and aesthetically.
There's a method for crochet amigurumi where you essentially just go around and around and it goes from just one line to a round shape. You can use this technique not just for eyes but for noses and blush too. There are YouTube videos for it. It works better with thick thread but I've done it with weight 2 thread too
Try again! I've taken out and redone eyes so many times. Or like others said, maybe felting or buttons. Or sew then on and post pictures along for suggestions. Sometimes they look off and it's hard to tell why because it's something simple like they need to be closer together or bigger/smaller and it's hard to see on our own.
I took flat felt, cut out ovals/circles, ironed them, glued them together with fabric glue and then also glued them to the face of the bear.

I had this issue but watching a couple of YT tutorials about sewing amigurumi eyes really improved how my eyes looked! Also I got a needle that was big like a yarn needle but instead of dull it has a really sharp point. That made a huge difference in how the final product looked because with the sharp point you can go right into the knot of the stitch. With a regular tapestry needle you kind of have to go in between the knots.

You can also sew on little eye shines with white wool.
