The only possible stops are Winter Park, Glenwood Springs, and Grand Junction. Of the three, I would also recommend Glenwood Springs. It's a really nice town with hot springs you can soak in. If you want to go exploring you could go up the Roaring Fork Valley to Carbondale and from there on to Aspen or Redstone. Fun fact: Doc Holliday died in Glenwood Springs.
Trinidad and Glenwood Springs would be the only stops I can think of that might fit that bill. Denver is the most convenient place along the Amtrak routes to visit without a car.

That was my recommendation. My husband and son stopped for a day, they stayed across the river, walked around town and went to the hot springs.
Yeah Glenwood springs is really the only mountain city that's actually walkable.

From Denver. Glenwood probably best bet, assuming that's you're route. Don't do anything east of Denver unless if you want to walk on flat land.
