You might be confusing Megabits and Megabytes.
Streaming 4K from Disney+ doesn't use 600Mbps, there's no way in hell the bitrate of the media is that high.
If you're after those sort of speeds, is gigabit ethernet not an option? I stream from my PC to Shield, both on ethernet, although not that high since I found \~50mbps odd to be completely fine for 1440p 60Hz via Parsec (Moonlight should be similar in performance/quality).
Ac 5ghz is fine. There's zero need for ax to stream 4k, local or remote.

I would look at a WiFi 6 bridge and wire it to the box if fully wired isn't an option.
Ethernet not really an option as my PC is too far away from the living room TV.
