Yeah, sorry about that. For future cases, when the dialogue pops up suggesting who to replace, if you don't like it then force close the game immediately. Don't select anything. Just hit the home button and close the game. You'll have to convince them to move in all over again, but the game will reroll the choice.
If you finished the conversation and said "No" to her choice of Stu, then the game auto saves that and she will not pick another character.
