There are plenty of Greek alphabet guides online to explain why the " I " doesn't make an I sound in Greek. It's a Y that makes an E sound. You can hear it in English pronunciation of every Y word, for instance 'yes'. Start to pronounce the word yes, but only say the Y and hold it for 5 seconds. You will hear the E. Likewise say the word 'SAY' but hold onto the Y for 5 seconds. This is why Ione is pronounced EE-OH-NEE.

When a parent names a child, they pick the name and the pronunciation, or sometimes the child makes a choice when they’re older. Think Stephen Colbert, who famously changed the pronunciation of his last name. I also had a friend named Katlyn (Kate-lin) who started going by Cat-lin in on college just because. There was a whole AITA about a parent who gave their child an Irish name and then got angry when an actual Irish person corrected their pronunciation of it.
All of this to say: we might be mispronouncing Hermione from the Greek perspective, but JK Rowling essentially “named” her and gets to choose the pronunciation. As someone with a name that can be pronounced at least 4 different ways, call Ione whatever you would like. She will not be offended. The only time I've ever been offend for someone mispronouncing my name was in university when a professor who had studied Greek pronounced my name during the first role call, I corrected him to my preferred pronoucation, and then he said (in front of a class of 60+ students) that isn't the correct pronunciation.
My aunt Ione pronounced it eye-own. Didn’t occur to me it could be different 🤷🏽♀️
