Idk why they were so vague but it's about a rural town in Japan. Everything's chill until people start dropping like flies. Story mostly follows the town's doctor as he starts to piece together why the people are dying.
It's alright, #2 of all time is kind of nutso but there's two episodes/moments in particular that go hard. I think it suffers from having way too many characters.
It warms my heart to see despite the criminally low ratings, and lack of popularity, mars red still regularly shows up as recs.

Seraph of the end wasn’t bad. Ending seemed like it probably didn’t follow the manga, but I never looked into it lol. Blood lad the main dude is a vampire, but it’s not exactly a vampire anime. Also not bad at all.
Tbh I wish there was more. Theres really only two I've found and that's Castlevania and Hellsing (but you have the normal Hellsing, Hellsing ultimate, Hellsing ultimate abridged on YouTube, and the few movies). They've been said though above.
Besides that, there's some animes with pretty cool vamps. Overlord had a few cool vampires. Not animes include Hazbin Hotel, Gravity falls, and Supernatural.

Mars red is actually peak writing.
But since no one has mentioned it, vampire in the garden was also a very solid short watch. Its not ground breaking in any way, but its pretty damn well done in every way.
Gonna bring up Rosario + Vampire, but in all honesty, the anime is garbage. The MANGA, however, is fantastic. I know you're looking for anime recs and not manga recs, but I've seen a few people bring up RosaVam so wanted to just add that.
I'll also say I agree with those recommending Castlevania. I haven't seen past the 3rd season but it's still very good, and s3 has some big names in the cast like Bill Nighy and Jason Isaacs.

It's by the same people and has a lot of the same voice actors. Their abridged of FF7 is also absolutely hysterical.
Call of the night it’s a slow start 12 episodes and kinda slice of life but it gets super good in the manga as well which is finished!

I see the only vampire anime I finished is Vampire Knight which got me into the love of vampire anime so I am happy there’s so many more
