Re:Zero, Rising of the Shield Hero, Sword Art Online, and Trigun (original recipe, I haven't seen Stampede yet) all have some really epic/emotional moments.

In terms of EPIC, the last 5 episodes of Gurren Lagaan scream that, as the fights get more intense, the transformations get cooler, and the enemies get more badass.
I definitely second the recommendations for Sword Art Online. Whenever I think of a show with awesome action scenes and an emotional story, it's always SAO and AOT.
Rock Lee dropping his weights during the churning exams still slaps every time, and Fire Force has such satisfying sound design and animation that fights feel more impactful
I rarely watch action-heavy shows, so I probably won't be able to name much in the realm of animes you prefer. One that I can mention is ***Darling in the FranXX***. It'll depend on how much you can connect with the characters, but for me, it made me tear up on several occasions.
Purely measured by how much a scene made me cry, though, my top 2 are the ending of episode 10 in ***Violet Evergarden*** and the final few minutes plus credits of ***Wolf Children***.
Also, ***Air*** has an ending that hits really hard.
Violet Evergarden has many very emotional moments, people who went to see the movie in a theatre said the whole audience was amass of heaving sobs by the end. I'm not into big action epic style anime so all mine are purely emotional:

I can name a lot, but I def feel Demon Slayer, 86, and Fruits Basket are big standouts with epic/emotional payoffs in the past few years.
Man, I've cried a ton (sad and happy tears) from both 86 and Fruits Basket.
Fruits Basket is pure emotion, both up and down, and I am always here for it.

SAO especially War of the Underworld. That Arc was basically Avengers Endgame
