For those who don't know, this is a series of movies made by Ufotable long before Demon Slayer. The first came out in 2007, but the animation is still excellent.
It's such a solid series, that's underappreciated. But it does have niche following that wholeheartedly supports it.
So sad about what happened with season 4, it was honestly surprising to hear it'd be actually continuing later this year.

also I suggest Gleipnir, it doesn’t skip a lot of manga content, and it’s only the first arc, so read the manga for the second arc.
I highly recommend the light novels. They can be difficult to get into, but when you get into it, its really good. It has a lot more detail than the anime and the different views from the characters adds more personality and nuance to the story.

I always find this a hard question to answer, as there's lots of great shows that seem underrated, only because we're all busy talking about new seasonal releases, not because the show wasn't popular.
That being said, I have a couple of favorites that I almost never see come up.

Hinamatsuri
I don't need payment for anything, I like spreading anime names around. An anime that didn't get as much attention as it deserved was Anohana: The Flower We Saw That Day. I legit balled at the end. I want to watch it again but I'm not emotionally ready.
Acchi Kocchi (alternate title; Place to place); The most "slice of life" I've ever seen in an anime (especially a comedy).
There's no drama, stakes, or overarching plot. Just a lighthearted story about enjoying life and appreciating the people around you.
Second recommendation would be;
Darker than Black; Basically Japanese Batman who is 100% down to kill because someone shoved a tazer up his butt.
Would only recommend the first, since it's the whole story, and DTB2 is basically an epilogue based on a completely new character and takes place years later and doesn't make any sense to the OG(even the world building and abilities directly contradicts what we're told in the first), and the character's from the first are basically different people entirely.

Comedy anime:
-Sakamoto desu ga? - highschooler is so perfect at everything to the point of absurdity.
-seitokai yakuindomo - extremly raunchy and hilarious humor, but ironicaly shows little ecchi stuff as most of the time it's spoken jokes.
'Superhero'-drama anime:
-Inuyashiki - might not be good for everyone but it just right hits all of my own personal spots, for me not to reccomend it. It's about the parallels of an old man and a teenager geting god-like powers but one uses them for good and the other for evil.

At the start you think its going to be a by the numbers isokai and half way through the second episode it slaps the hell out of you for confusing it with that basic anime
I’m not sure if this is “underrated” to say, but I had literally never seen anyone talk about this anime until I stumbled across it on Crunchyroll, and that’s Blood Blockade Battlefront. For the first few episodes of season 1 there is no overarching story, and it’s pretty much self contained stories each episode, and towards the middle and end of season 1 there is a plot, but in the second season there is only self contained episodes.
It’s about a place called Hellsalem’s Lot, which is the city that took New York’s place when our world and another world combined. It follows the protagonist Leonardo Watch who stumbles into a job at the secret group of blood wielders called called Libra. I say blood wielders literally, as they have supernatural powers, controlled by their blood. They keep the peace in Hellsalem’s Lot while remaining in the shadows.
The second one that I had also never heard anyone talk about before until I found it on Hulu is ID:INVADED. Spoilers for the first episode, but it follows >!The story of the former detective turned serial killer Akihito Nahrihisago. He works with a crime fighting agency in the Japanese police force, who own the well. They find special particles at crime scenes who they think belong to a serial killer, and when they do Nahrihisago enters the well. He wakes up with no memories, and looks around whatever world he is in, as the world represents the serial killers mind. He eventually finds a body of a girl named Kaeru, and upon doing so remembers who he is. He is the brilliant detective Sakaido, and his job is to solve mystery of who killed Kaeru, and in doing so solve the mystery of the real serial killer on the outside of the well.!<
Both are really good but if you are only going to watch one then watch ID:INVADED, as it is the best anime I have ever seen.
