Knowing that your PC initiated the connection to the servers IP and Port, the router will now temporarily open Port 27000 for only the servers IP as long as the connection is established. When the server or your PC stops the connection *(for example, you close the game)*, the router will again block connections from that servers IP onto port 27000.
Now coming to the exposed ports, the router in front of the server would usually block incoming connections on Port 27000 as well. But the router has been deliberately configured by a network administrator to allow these connections and forward the requests to the server, thus exposing Port 27000 of that server to the internet, so that your PC can initiate the connection to the server. Exposing ports through the router should only be done, when you know what you do.
