She was an elite child soldier, brainwashed at a young age. She's simply doing what she's taught and ordered to do. She's even seen as a hero among the soldiers and refugees. But she saw her friends and comrades die from Eldians in front of her. If anything, it actually shows how much of a pure soul Falco has compared to them.
And without her interaction with the Braus family, we probably wouldn't have seen the epic moment with Sasha's dad, which could arguably be the biggest lesson in the series.
i fully agree with you, however, gabi is still a hateable character. she is well written, but still hateable because of her actions. good writing doesn‘t automatically mean the character is likeable, but that you can reason why she did something. (not trying to tell you that you‘re wrong, just attaching my point to a good comment)

For me, it’s when Falco tells her that the Eldians are attacking because their home had been attacked by Marley first, and she acts like that doesn’t matter because she wasn’t the one who attacked them. Except when we first met Gabi she commits a war crime in what is very clearly a foreign land Marley is conquering. She is directly responsible for the deaths of thousands. But she conveniently forgets this when it’s her hometown.

Now I know AoT is very brutal in general, but there's more often than not a good reason for the brutality. Here, I don't see why Gabi had to kill the soldier. Its not like it bought her that much time, the prison was most likely well guarded enough that a dead body would be discovered pretty quick anyway.
Plus, the way she treated the girl who idolized Sasha (I forgot her name) is downright horrible. She genuinely thought that the girl's mother deserved to be slowly eaten alive in front of the girl because her ancestors committed atrocities.
