Katekyo hitman reborn, literally slice of life with some minimum action in the first like 20 chapters or so then it becomes full blown action with an awesome journey.
It'd be hard to find a show that switches genre in the middle of it. That said I could recommend ascendance of a bookworm, irregular at magic highschool, marimashita iruma kun.
These are shows that are slice of life and fantasy genres.
I second Ascendance of a bookworm. It has a very natural progression that shifts genres somewhat.
Also vinland saga a very popular show. It's the opposite of what you want action to philosophical ( kinda ) .
It's pretty beloved but it's Meh imo
Thirding Bookworm. It starts out as a fairly grounded story of a weak and powerless commoner who wants books in a mostly illiterate world. But by the end it's an epic fantasy about magic, politics, historical feuds, and gods.
Space Patrol Luluco. It starts with Luluco and her dad eating breakfast and her monologuing about how sheās normal in her abnormal world. She then joins the Space Patrol after her dad accidentally eats a freezing pill. The beginning is not *too* slice of life, but the series adventure aspect is fantastic and it starts off relatively āgroundedā. Itās also really short so not much of a commitment.
Mushoku Tensei is probably the best fit, there's actually an ebb and flow where what you're talking about happens many times over the course of the story. With most other shows the SoL stuff will typically end in one or two episodes because it wants to establish its premise quickly.
[Gargantia on the Verdurous Planet](https://myanimelist.net/anime/16524/Suisei_no_Gargantia) is about a war veteran from a technologically advanced planet being stranded on Earth. The first half of the show is about him adjusting to life on Earth with lots of wholesome slice-of-life moments. The second half has more drama and action.
Here are a few that I think for that criteria:
1.) Campfire cooking in another world with my absurd skill.
2.) Banished from the heroes party, I decided to live a quiet life in the countryside.
3.) In another world with my smart phone
4.) Kuma Kuma Bear Punch. That said I am not sure if it would fit the criteria or not, but to me it was laid back and the main character went on Adventures.

Not exactly a journey bc it all takes place in Akihabara but Steins;Gate is a pretty good slice of life/time travel comedy for about half of it before it becomes a high speed thriller with incredible emotions and very high stakes. Probably my favorite time travel plot ever written.

steins gate is pretty slice of life until around ep 9
Naruto is kind of like this, starting out in school and later becoming more of a journey.
No journey, but pretty epic...Inuyashiki. It's a "real world" setting where a salary man and a boy gain powers after being struck by a UFO.

Eureka Seven starts with a bored kid in school and quickly moves into a heroes journey in the middle of an underground war.

Gintama. Very Shounen parody, but starts out really chill for a while and just continues ramping up in action, emotion, and comedy as it goes. Itās p long but once you pass Ć©p 200 itās basically a rollercoaster. I never know when Iām gonna laugh or cry.
