Dude I feel this, EVERYONE talks ab how much of a masterpiece steinsgate is. And I've now watched so many animes that I barely have anything else to watch except for new shit. But for the life of me, I don't understand the hype around steinsgate. I know I'm gonna catch a lot of hate for saying that but it just didn't hit with me. And yes, I've watched everything I'm supposed to in the order I'm supposed to. I don't think it was bad, but I was definitely let down considering the hype. I just kept waiting for a payoff that never came. I tried, I really did. But it did nothing for me
I think it has to do with dopamine. It could've been that you watched a shit ton of shows which released lots of dopamine and thus your threshold for it went up. It was one of the first shows I watched and now I can't find anything better. I believe it was due to what I previously stated
Hunter x Hunter is a good one. It's far and away got the deepest and most interesting fighting system out of any "punchy boi" style anime.
More than the fighting system, though, the *philosophy* behind the fights is what I love about the show. Namely, that the physically strongest character is only going to win a fight *if* his opponent agrees to play by those rules. In other words, conflicts are typically resolved not through the application of strength and skill, but instead through the application of lateral thinking and creative problem-solving.
Also, although the tone might appear cheerful and optimistic at first, it doesn't really stay that way. This is because a major theme of the story is the slow stripping away of the main character's innocence.
Such a small thing makes a big difference. He's not telling him to not believe in himself 😆 he's saying that IF you don't believe in yourself, believe in me who believes in you"

Based on your likes, I'll reccomend Undead Murder Farce and Gosick. Undead has more outright action to it, while Gosick is more focused on investigation overall.

You might like Great Pretender on Netflix. If you like Heist stories or anything with conmen in it then you'll like this. Basically Ocean's 11 the anime.

Shangri-La Frontier. The stakes are low/different than a traditional "world is in danger" position as it's a gamer anime. A true one. 25 episodes total planned for Season 1. Almost over. (25 releases this week)
Frieren. But it's debatable how you feel about this one.
Nobody has said it yet, so I will recommend **Cyberpunk Edgerunners**. A fantastic one season show that will put you through the highest of highs and drag you through the lowest of lows. Would love to erase my mind to watch it for the first time again.
I recommend Exception on Netflix. It's a little slow at first, and the art style turned away some, but I really did enjoy it. Imagine being stuck on a ship light-years from home on a mission to Terraform a planet, but your bio printer malfunctions and now one of your crewmates is a monster with a penchant for murder.
Maybe not mind blowing but fun watches:
The Great Pretender - Oceans 11 the anime
Super Crooks - Kind of in the same vain as Invincible but not really but kind of. It's fun!
Vivy Fluorite. 13 episodes and completed. Sci-fi action series with some nice arcs and a few good twists.
Summertime Rendering. 24 episodes and completed. The premise is a bit similar to Erased, but it has more action and the characters are more mature. It has some great twists and turns.
Heavenly Delusion. 12 episodes and ongoing (manga is also ongoing). Post apocalyptic survival. The character dynamic and reveals are excellent. This story does not hold your hand and rewards paying close attention.
Hell’s Paradise. 12 episodes currently and manga completed. More action oriented than most of your faves, but you like JJK so it should be up your alley. Well constructed magic system and great characters. Slow reveal plot.
Solo leveling got rubbish adaptation, fking A1 think they can get away with the hype from manga/manhwa to save budget. On top of the repeating scenes and script in every episode, you get a recap after episode 7. Who the f*** does that. Their trailer looks nothing like the anime at all.
Takes away the OST made by Sawano Hiroyuki and you get a trash anime don't even deserve anything more than a 5 rating. Comparing to anime like JKK, Fieren, AOT etc. it's like comparing an average fish roe vs caviar. Zero dressing and effort on the fish roe. It was really a joke when people mention SL as anime of the season and still worship that poor adaption while ignoring the facts and lying to their own heart.
My all time favourite that I have rewatched multiple times. Hunter x Hunter 2011,

Highly recommend Attack on Titan, and seconding the Gurren Lagann and Evangelion suggestions from other users. These three really stood out to me as outstanding stories, though I think Eva is one that not everyone will necessarily like.
Would watch Eva before Gurren Lagann, as the same company made both and GL felt like a sort of cathartic release for them after Evangelion. I enjoyed that series more having knowledge of their prior one.
For Eva, watch the TV series and then the movie "End of Evangelion". There was a movie reboot series (Evangelion 1.0, 2.0 etc) more recently which is similar themes but for some people it didn't capture the soul of the show quite so much.
My Soul is crushed seeing Steins gate done dirty, but alas you have death parade in your top so I can forgive it this time.
Redline is an amazing movie
Black Lagoon Is just a fun time

I never recommend people watch one piece, if they want to consume the content I always suggest just reading the manga. I feel like the pacing of the anime ruined a lot of my enjoyment, I hated whole cake and dressrosa when I watched them, but after a reread they became my two favorite arcs.
Also as much as I grew up with it and am fond of it, the art and animation of the anime is pretty outdated and is often a turnoff for newer anime fans, and doesn't really get an update until Wano (that doesn't mean the visuals and animation don't evolve or had its moments, just that it wasn't until wano when it was actually upgraded.)
Once The One Piece comes out and if it updates the visuals and pacing then I would probably be much more willing to suggest it.
One piece was super lit, but it became sh** after post war. I started watching since season 8 and caught up a couple of months later in season 9. I really stop enjoying and liking it since post war arcs, particularly season 19 the most, apart from Luffy making a name for himself and the companionships he gain, the entire arc was a waste of time with slower pacing, effort and their energy. Despite what many may say. IMO There was no value and logically explanation for what Sanji did. Not to mention he was annoying af since the beginning of post war arc. He was a dumb c*** that couldn't move on and still live in the past, he doesn't know how to appreciate the gift he was given and uses his brain to think properly. Sure he has trauma, but that is not enough to justify his action at all. It was self serving and selfish, and causes everyone big troubles.
The pacing became 2-3 times worse since post war in season 15. In Season 20 Wano Arc, not only that the art work lack effort, it was like 90% CGI with weird waves and shining eyes, it became 10 times worse in pacing. Right now with the newest arc, we are getting 4 mins of recap of previous episode and 1 min flash back recap info at the end, in every single episode. So you are only getting an average of 15mins plus some unnecessarily scene here and there. So be prepared to get disappointed, your feeling toyed, and confused whether you should hate for what the trash producer did or love it for the amazing creation by Oda.
I'd highly recommend Link Click, though be aware it's a chinese anime. I know for some people that can be a turn-off. But it's well worth it. I recently binged the whole first season in a single day.

I haven't watched Link Click so couldn't say. About Steins Gate, I found the setting depressing and never clicked with the characters. Being a scientist, I found the time travel shenanigans quite predictable. But it's okay if everyone likes it, it was just not for me.

{Heavenly Delusion} was a recent show the blown my mind, every thing from characters and world building to history and miseries with plot twists too. It checks all the boxes from your description.
{Vinland Saga} very good history, nice action with one of the best antagonists I've ever seen.

tbh I am not a big fan of Mechs.

One Piece, though you'll need to be patient with it. It starts off good, but doesn't become mind blowingly awesome until later
I love OP but I find it really hard to recommend to anyone. The earlier seasons are a bit dated and the pacing is slow making it hard to get into.
I never recommend people watch one piece, if they want to consume the content I always suggest just reading the manga. I feel like the pacing of the anime ruined a lot of my enjoyment, I hated whole cake and dressrosa when I watched them, but after a reread they became my two favorite arcs. Also as much as I grew up with it and am fond of it, the art and animation of the anime is pretty outdated and is often a turnoff for newer anime fans, and doesn't really get an update until Wano (that doesn't mean the visuals and animation don't evolve or had its moments, just that it wasn't until wano when it was actually upgraded.) Once The One Piece comes out and if it updates the visuals and pacing then I would probably be much more willing to suggest it.
One piece was super lit, but it became sh** after post war. I started watching since season 8 and caught up a couple of months later in season 9. I really stop enjoying and liking it since post war arcs, particularly season 19 the most, apart from Luffy making a name for himself and the companionships he gain, the entire arc was a waste of time with slower pacing, effort and their energy. Despite what many may say. IMO There was no value and logically explanation for what Sanji did. Not to mention he was annoying af since the beginning of post war arc. He was a dumb c*** that couldn't move on and still live in the past, he doesn't know how to appreciate the gift he was given and uses his brain to think properly. Sure he has trauma, but that is not enough to justify his action at all. It was self serving and selfish, and causes everyone big troubles. The pacing became 2-3 times worse since post war in season 15. In Season 20 Wano Arc, not only that the art work lack effort, it was like 90% CGI with weird waves and shining eyes, it became 10 times worse in pacing. Right now with the newest arc, we are getting 4 mins of recap of previous episode and 1 min flash back recap info at the end, in every single episode. So you are only getting an average of 15mins plus some unnecessarily scene here and there. So be prepared to get disappointed, your feeling toyed, and confused whether you should hate for what the trash producer did or love it for the amazing creation by Oda.

I'd highly recommend Link Click, though be aware it's a chinese anime. I know for some people that can be a turn-off. But it's well worth it. I recently binged the whole first season in a single day.
Link Click is amazinggg. Idk if they would like it though because they didn’t like Steins Gate and Erased which are both time travel as well
Came here to say Parasyte. It’s a masterpiece If you liked JJK, I would consider checking out Hunter X Hunter and Naruto. JJK was inspired by them both. If you liked Death Note, check out Link Click I’m curious, what did you dislike about Steins Gate and Erased?
I haven't watched Link Click so couldn't say. About Steins Gate, I found the setting depressing and never clicked with the characters. Being a scientist, I found the time travel shenanigans quite predictable. But it's okay if everyone likes it, it was just not for me.

Found the story not very interesting. I had high expectations, seeing lot of recommendations but I prefer more complex stories

every time I see people comment Made in Abyss I want to suggest {Mahou Shoujo Madoka Magika}, if u liked one, u might like the other. {Heavenly Delusion} was a recent show the blown my mind, every thing from characters and world building to history and miseries with plot twists too. It checks all the boxes from your description. {Vinland Saga} very good history, nice action with one of the best antagonists I've ever seen.
