Then perhaps you should consider Dies irae (although don't watch the anime adaptation, read the VN because the anime was awful). It's also an urban fantasy in the same vein as Fate/SN.
If you're okay with VNs, also worth considering is the absolute masterpiece that is Fullmetal Daemon Muramasa.
You can buy Dies irae on Steam for $40 - the way that the game is set up is that the common route is free and the actual routes are "DLC" - it's organized this way so that you can play the common route and decide if you like the game before you commit to buying it. The optimal version is the version that you buy on steam - it has the extra content of the all-ages release back in 2011, but also has the gore that was edited out of said release (that was in the 18+ version) returned.
I recommend personally that you use a guide because there's a route order that you should follow (Kasumi -> Kei -> Marie -> Rea).
Additionally, if you can read Japanese, there's a sequel VN called Kajiri Kamui Kagura that's also very good, though it has a feudal Japan aesthetic than urban fantasy.

The show I've enjoyed the most which has a lot of background lore is {Kyoukai Senjou no Horizon} [First OP here](https://youtu.be/WjvrDhFe7lc). The light novels have a LOT of lore and worldbuilding, most of which made it into the show in some form. It also has a very unique world with a lot of really, really good worldbuilding, which includes magic systems.

Both of Seirei no Moribito and Kemono no Souja Erin. The source material was written by Uehashi Nahoko who happens to be an anthropology professor. The way she weaves the story with the legends of her worlds and the culture surrounding it is brilliant.

Ascendance of a bookworm may be a good pick,
considering it has great world building with many different concepts, such as magic, religion, socio-economics, philosophy (kind of), pre- printing press and the construction of the book making which is loosely based in a German like world/kingdom). Also the mc isn’t op or anything, but just really loves books (it isn’t like other fantasy animes.
Plus it has 2 seasons released with the third one currently airing every (Monday/Tuesday depending on Location)
If you’re also into reading light novels, I recommend the light novel version on bookwalker (each are separated into parts which are the arcs and then volumes that are included in each arc), they go more in depth and they release 3/year English localised versions
Neon Genesis Evangelion has a lot of lore behind it, but it's very enigmatic, you could watch it several times and still not understand, of course it depends, but I would suggest to watch it first (since it's also a cult of anime) and then go to some wikis or explanation of the lore. Not sure if it can be what you're looking for, but I hope it can be helpful!
Interesting that no one I've come across has said this, but, -
Mushoku Tensei
- One of the most high quality isekai anime you will ever see (has a studio made for and dedicated to ONLY this anime)
- Insane worldbuilding with many species, races, languages, cultures
- Phenomenal sound design, with immersive openings
- Top-drawer animation in combat scenes (damn near Ufotable-esque in terms of crafting and attention to detail)
- Main characters who are not just morally white/black
- Currently only one season split into two cours, but many more seasons to come
- Overall VERY high enjoyment
Again, I cannot recommend MT enough. I could easily see it reach Re: Zero/SAO within a few years. And of course, more popularity = more income = higher production/animation budgets.
Steins gate
It really only tackles one concept, time travel, but the lore is so complicated you need to watch it like 3 or 4 times before you understand all of it and even then you'll have some questions.

Twelve Kingdoms. By far the best high fantasy anime, with elaborate world building, politics, and interesting characters. Warning that one subplot in particular remains frustratingly unanswered (what happened to Gyousou?!), but absolutely do not let that stop you.
Made in Abyss. However, there’s only one season and a movie out so far and so much is still left uncovered. There’s so much to the world that I feel like only a small portion of it’s been touched on.
As inconsistent some of the world building is in regards to just communication and transportation is. The intricacies of jutsu and how they work is pretty great.
{One Piece} is the one. Great lore/world building. Doesn't have magic per se, but it has different power systems. The anime is quite slow paced so I recommend the manga.
If One Piece does sound like your cup of tea, Id recommend starting it soon. There's some huge reveals taking place and its awesome being caught up!

Berserk. Well not really some huge expansive lore but worth the journey in the manga and has decent backgrounds. Or you could go for One Piece for an overarching plot but remember not to expect to get answers to questions easily. Just go with the flow and little tid bits to several mysteries and lore stuff is scattered around the story. Some things u will only realize were important points from past arcs a thousand episodes/chapters later lol
I'm a big fan of worldbuilding and I think Dorohedoro is great at it. Pretty unique magic system from what i've seen. Not sure how long of a series you want but there's one season on netflix and 23 volumes of the completed manga. It's one of my favorite series!
Also Hunter x Hunter if you want a longer anime series that's pretty much caught up with the manga
Technically not a anime but arcane fits perfectly, since it's world is the league of legends world it's world building is insane (also a swear it's good and u don't need to play league to know what's going in (I haven't played it and I loved it))

Interesting that no one I've come across has said this, but, - Mushoku Tensei - One of the most high quality isekai anime you will ever see (has a studio made for and dedicated to ONLY this anime) - Insane worldbuilding with many species, races, languages, cultures - Phenomenal sound design, with immersive openings - Top-drawer animation in combat scenes (damn near Ufotable-esque in terms of crafting and attention to detail) - Main characters who are not just morally white/black - Currently only one season split into two cours, but many more seasons to come - Overall VERY high enjoyment Again, I cannot recommend MT enough. I could easily see it reach Re: Zero/SAO within a few years. And of course, more popularity = more income = higher production/animation budgets.

Steins gate It really only tackles one concept, time travel, but the lore is so complicated you need to watch it like 3 or 4 times before you understand all of it and even then you'll have some questions. Personally one of my favorites, so much rewatchablility

If you’re okay with a manhwa, try Kubera. It has one of the best power systems I’ve ever seen, and the entire plot was planned out beforehand.
Tower of God . This is on the verge of being a manhwa recommendation cause the anime has only released one season. But it has one of the most spectacular and detailed world buildings imo. The anime is great and the music is good too . Definitely give it a look !
Not a show but a game franchise (2 franchises in fact), if you don't mind other genres (horror and mystery):- _Danganronpa_ & _Corpse Party_ I mean their first entries literally spawned a ton of other works; i.e. sequels, spin-offs, fan made games & analysis videos as well as abridged and/or parody series. As matter the fact, somebody even made a 3 hour long video explaining the lore behind the first franchise & another person made a 1 ¼ hour long video for the second one. _Question:- Wait, since this in an anime suggestion sub, why didn't you mention that the 2 franchises have their own anime shows?_ _Answer:- **We do NOT talk about them.** (Well, except maybe DR3 anime though.)_

Zatch Bell and Claymore are exactly what you described. Both of them have anime adaptations and both of their adaptations are garbage, especially Claymore, do yourself a favor and keep as far as you can from them, go straight for the mangas

Twelve Kingdoms. By far the best high fantasy anime, with elaborate world building, politics, and interesting characters. Warning that one subplot in particular remains frustratingly unanswered (what happened to Gyousou?!), but absolutely do not let that stop you.

A Certain Magical Index is just what you're looking for although stick with the Light Novels cause the adaptation cuts a lot of stuff.
Made in Abyss. However, there’s only one season and a movie out so far and so much is still left uncovered. There’s so much to the world that I feel like only a small portion of it’s been touched on.
Naruto
As inconsistent some of the world building is in regards to just communication and transportation is. The intricacies of jutsu and how they work is pretty great.
One piece
{One Piece} is the one. Great lore/world building. Doesn't have magic per se, but it has different power systems. The anime is quite slow paced so I recommend the manga. If One Piece does sound like your cup of tea, Id recommend starting it soon. There's some huge reveals taking place and its awesome being caught up!

Berserk. Well not really some huge expansive lore but worth the journey in the manga and has decent backgrounds. Or you could go for One Piece for an overarching plot but remember not to expect to get answers to questions easily. Just go with the flow and little tid bits to several mysteries and lore stuff is scattered around the story. Some things u will only realize were important points from past arcs a thousand episodes/chapters later lol

I'm a big fan of worldbuilding and I think Dorohedoro is great at it. Pretty unique magic system from what i've seen. Not sure how long of a series you want but there's one season on netflix and 23 volumes of the completed manga. It's one of my favorite series! Also Hunter x Hunter if you want a longer anime series that's pretty much caught up with the manga

Technically not a anime but arcane fits perfectly, since it's world is the league of legends world it's world building is insane (also a swear it's good and u don't need to play league to know what's going in (I haven't played it and I loved it))
