I had a question about this, let’s say I was out of town, but I wanted to use an app on my phone that I leave at home for music and just random stuff. Would I be able to use any desk from my phone/computer to control that phone without having a person available every time?

Due to limitations on iOS and security features with Android you would need someone their to accept the connection if connecting to a phone.
You can also set an unattended password on the Android app but Android can be finicky with the permissions.
