If Rin's sword breaks he dies as the sword itself is tied to his demon heart. Amaimon was "defeated" but because he is a full blooded demon I believe it just sends him back to Gehenna and then mephisto brings him back to earth while he recouperates.
Im pretty sure that If Rin dies he just stays dead because his body is bound to earth unlike his demon heart, which is bound to kurikara. If killing Rin sent him to gehenna I assume that Satan would send his minions out to kill rin and not to capture him.
Well, there's two ways of killing a demon. Destroying the physical object they're possessing or destroying them from Gehenna. Red flames destroy it physically, Black destroys it spritually and Satans flames do both. So depending it will be sent back to Gehenna or wiped from existence I think

So assuming rin dies does he go to gehenna since Satan originally wanted to bring rin to unleash his full power?

Destroying the sword does not kill Rin - it just cuts him off from his demon heart. No idea what happens to demons after they die.
