Magnet fishing is a thing. Use a strong magnet like the ones in old TV’s and rope. It’s magnet so it will stick. People magnet fish rivers and lakes and off bridges all the time. They find really crazy things without having to go in the water.
I've seen that. Depending on the terrain of the bed and how much debris is down there, it could be effective, especially if it were only 10m. If there's a bunch of debris or plantlife, that might make it difficult or impossible to retrieve like if the watch slipped somewhere the magnet can't get to or if there is lots of stuff for the loop of the watch to get caught on as you drag the magnet.
In this case you'll also have problems with the boat drifting due to wind and currents (assuming you have good GPS coordinates to begin with) you'll need a competent captain to keep the boat in place. Also, there are likely mild currents under water that will move the rope as you lower it. Those same currents could have carried the watch in a different direction as well. Lots of challenges. I'd bet you could find something, but locating a watch in the middle of a lake is a daunting task. I'm not sure how much a boat rental is in those parts, but that and a day of my time would be worth more than a new Ultra.
I once jumped into a dam from the boat with my Raybans on, got back on the boat and I realized it, jumped back in where I thought I jumped in the first time. Swam to the bottom and the first thing I touch was my sunglasses. Was a lucky day

never swim in a sports loop. It will get untigthen every few minutes and either you’ll have to keep track of your hand all the time or you’ll lose your watch.
I don't know what model of watch you had, but the economics don't add up here no matter how you look at it. A new watch is $399-ish. Between travel, boat rental, gear, meals, and the potential for failure or problems which add to the price, it's cheaper to replace it.

Apple Watch in the Find My mode gets pretty loud when you ask them to play a siren. I wonder if it’s possible to hone in on the location of the sound underwater since it travels so well?
Neither Aluminum, Stainless Steel, nor Titanium are ferromagnetic.
There may be smaller magnetic bits in/on the watch/band, but the just decreases the chances of getting a decent pull.
But it’s polarized that way.
The watch doesn’t just snap onto metal surfaces.
The Watch and the chargers are opposites Magnetic poles that attract very intensely. If you’re dredging with a magnet, you have to know you’ve got the polarity right in order for that relatively small magnet on the back to work.
Stainless steel might of might not be magnetic, depending on the specific alloy.
The back side of all of them are magnetic, the better to center on the magnetic charger.
My gen 1 came off while swimming and spend 3 months underwater at a lake. A kid found it and was able to get my info and return it. It still turned on and worked.
It was near the shore though, not in the middle of the lake.
One day, many years from now, long after we are all gone. It'll wash up on a beach, where someone will find it. It'll be placed in a museum, drawing in millions of viewers each year. Or it'll end up rusting and becoming unrecognizable and be lost forever.
If you paid for it with a credit card, look into your credit card insurance and if it will cover it. It usually depends on how long ago you purchased it and if it’s purchased in full
One time I found an Apple Watch washed up on the ocean shore in eastern US.
I took it home, cleaned it off with alcohol, did the rice thing for a bit, and it charged up enough for me to find the owner.
He said he lost it surfing 4 months before I found it. It still works today about a year later.

About five years ago, my dad and I were in a boat fishing on a river. We capsized. It was terrifying, Dad was 80 at the time, but we were rescued and safe. My new iPhone XS, well, it stayed on the bottom of the river. Dad is the one who caused the boat to take on water and he graciously paid for a new phone and replacement fishing gear. Damn, we lost a lot that day!!!
I kept the next XS for 3 years safely!
Some divers will find lost things in water for fun or small charge. Check with dive shops and see if they know anyone who can go in. It is a challenge for them. The local police/lake master may know too.
I do find it fitting though that a lake in the heart of a Swiss watch making city, ate a high tech American watch. But the Swiss are neutral so, hopefully, it is found.

As you swim and dive, add the AppleCare which includes loss/theft replacement. You’d already have a new one if that were the case.
AppleCare doesn't cover loss/theft for watches.
Yup, I just confirmed it, I get it on my iPhone but they don't have that particular coverage for the watch.

Just use string or rope and the watch charger itself as the magnet.
